Super Easy Rhubarb Syrup

Rhubarb – that amazing, versatile ingredient which brings joy in my garden in the beginning of every summer. So why I love it? Most importantly, it’s the combination of sweet and tart and it brings a beautiful flavour to so many dishes. Besides cooking and baking, I also love to use it in drinks. For that purpose I  created the recipe for this beautiful rhubarb syrup, which tastes heavenly (and look at that colour!). If you need something delicious but simple to use to finish your breakfast pancakes or to make amazing drinks for your summer party, this could be your answer!

Super Easy Rhubarb Syrup

Ingredients

  • 5 dl rhubarb, chopped
  • 5 dl sugar
  • 5 dl water

Instructions

  1. Place all the ingredients in a sauce pan and boil in medium heat for about 20-30 minutes. Sieve the syrup (save the remains and enjoy for example with yoghurt). You can keep boiling the syrup to make it thicker but I like the syrup pretty thin. Use in desserts and drinks!
